It doesn’t take much to make me happy.  Really.  Sit me in a room filled with silence and I’ll make my own music.  Or simply enjoy the silence.  I don’t get bored.  Ever.

So, needless to say when I discovered that I could enjoy some of my favorite muffins again, I got excited.  Seriously, who else do you know that gets excited about Soy?  For several years now, I’ve lived a life without dairy.  For the most part anyway.  Sometimes I cheat.  Then I regret it.  Or rather (as Winnie the Pooh would say) the rumbly in my tummy reminds me not to partake again.

This week at the grocery store, I picked up a carton of Soy Milk.  Seriously.  Why haven’t I thought of this before?  I think I’ve tried drinking it along time ago and wasn’t too impressed and never thought of it again.

I probably was still in feeling-sorry-for-myself mode and simply rebelled against the idea of not being able to drink milk anymore.

Well, I put my big girl panties on and learned to adapt.  And, I’m not sad about it at all.  I think it’s probably a good thing that I don’t eat sour cream, cream cheese, bread, butter, milk, or cereal (oh, I how miss having granola cereal and milk)—or I’d probably be too big to walk through my own front door.  All things sweet are my weakness and I’ve had to learn to substitute for healthier choices or simply do without.

And it’s okay.

I think I’m a healthier person because of it.

Now, back to the Soy Milk.  Woohoo!  I decided to give it another try and actually bake with it this time.

Let me tell ya Internet friends, I’ve had an entire new world of food re-opened for me!

I’ve cooked several dishes with the Soy instead of milk and it’s really good; I can’t tell the difference at all!

Can you tell I’m excited?!
