Raise your hand if you ate entirely too much food over the last few days.

If you’re like me, you’re the kindergarten kid with both hands raised screaming, “me, me, me!”

It’s time to get back on track Internet friends.  You don’t have to wait until January 1st to recoup your losses.

For your omelet, you’ll need:

*Egg Whites (before I started using carton egg whites…insert choral singing hallelujah!…I used carton eggs and separated the whites).  This works much better!

*Your choice of veggies.  Really whatever you have in your fridge at the moment.

*For this omelet I used spinach, cherry tomatoes and onions.  Other options include fresh mushrooms, sliced squash or zucchini…insert more choral singing!

Use spray cooking oil in your small fry pan and saute your veggies until tender or your spinach wilts.

Pour in your egg whites just to evenly cover your veggies.Gently pull from the sides until the eggs become firm.Flip.  Top with cheese if you so choose.

Gently slide your glorious and healthy omelet onto your plate and fold.  (Yes, it’s a paper plate; welcome to my world).Another thing that rocks my world about carton egg whites is the lonnggg expiration date!!  Woop woop!  Can I get an Amen to that!?Have a guilt-free week my friends!  Until next time, go eat an omelet!
