Since I started counting calories back in October, this recipe has literally become a staple in my kitchen.  It’s also so easy, I always have the ingredients on hand in case I need a quick supper or unplanned guests to feed.

One thing that is so great about this recipe is nothing is exact.  If you forgot to buy one of the items, it’s okay.  Wanna add something else you don’t see here?  Go for it!  Make it your own!  I love it!

These are the ingredients I usually include.

I brown the turkey in the same pot I’ll be cooking the soup.  The ground turkey is so lean, you don’t even have to drain any grease from it.

This is the hard part, so get ready.

Once the turkey is brown, simply add everything else.  I also include the juice from each can, no need to drain.

Add the taco seasoning.

I typically use only about 1/3 of the small jar of Picante sauce to just give it an extra kick.  This is also when I add that.

Serve with Baked Tostitos Scoops and enjoy!

And if you’re really feeling daring and unconcerned about counting the calories, top with a dollop large spoonful of sour cream and shredded cheese.

Then take some of this later in the evening.

Your family will thank you.
