A whole chicken is a must have, I always have-one-in-the-freezer staple.  It’s so inexpensive and can be used in tons of different recipes.

I typically roast it in the oven and then have it available to use in various ways. I especially love that I can put it in the oven on about 350 degrees and leave it for about an hour and a half (depending on the size) without any fuss…..easy peasy!

I drizzle it with olive oil, add salt and pepper and a little Emeril’s Essence.

If you buy a chicken specific for roasting, it should have this red little thingy that will ‘pop up’ when it’s fully cooked.

Now you know that’s a pretty bird!

I normally double check the temperature just to be safe.

And once it’s completely cooled I pull all the meat off the bone and shred it with my hands.

Is that a pile of deliciousness or what?!

Here’s the great part:  you can store this in the fridge for salads, sandwiches, chicken salad, casseroles, chicken and rice, chicken and dumplings or chicken pot pie to give you a few ideas.  Or if you’d rather not pull it off the bone, you can eat it right out of the oven like we sometimes do, too!

Tonight’s chicken is for BBQ chicken sandwiches.

Simply place the chicken in a skillet and add as little or as much of your favorite BBQ sauce as you’d like.

Heat thoroughly and let the chicken bathe in all that sauce.

And serve on a whole wheat bun with roasted sweet potatoes and pickles on the side.
