I luvvv Fall weather, cooler mornings and cool days.  There’s nothing better than open windows and fresh air breezing through the house.

And because I’m in the Fall mood, I’m adding pumpkin to some of my favorite foods today.

Breakfast

Oatmeal with walnuts, pumpkin, brown sugar and All Spice.

Lunch

Quinoa with pumpkin and dried cranberries.  I cooked this quinoa in chicken stock and added pumpkin and dried cranberries when it was done.

Iced Coffee

Earlier this week I went through a coffee shop drive-thru and ordered a Pumpkin-Pecan-Cinnamony something or another kinda latte.  While the flavor was good, it just wasn’t sweet enough for my taste.  I stuck it in the fridge and pulled it out this morning to tweak it to my liking.

Before:  ehhh… so-so…

Add a little more pumpkin…

and a little more brown sugar…

with a little more vanilla soy milk and blend.

After:  ahhh…much better.

  1. I love reading your Blog…like running and like to see how others are getting it done!! But when I read this one had to share this recipe because I watch (or try) to watch what I am consuming. It can also be vegetarian with a different type of cheese…and has lots of fiber from beans and other good stuff for you and is low in fat.

    • Thank you Alice for posting your recipe and reading my blog! I’m tucking your recipe away for now instead of including it because I’d like to highlight it in an upcoming blog post.
