I luvvv Fall weather, cooler mornings and cool days. There’s nothing better than open windows and fresh air breezing through the house.
And because I’m in the Fall mood, I’m adding pumpkin to some of my favorite foods today.
Oatmeal with walnuts, pumpkin, brown sugar and All Spice.
Quinoa with pumpkin and dried cranberries. I cooked this quinoa in chicken stock and added pumpkin and dried cranberries when it was done.
Earlier this week I went through a coffee shop drive-thru and ordered a Pumpkin-Pecan-Cinnamony something or another kinda latte. While the flavor was good, it just wasn’t sweet enough for my taste. I stuck it in the fridge and pulled it out this morning to tweak it to my liking.
Before: ehhh… so-so…
Add a little more pumpkin…
and a little more brown sugar…
with a little more vanilla soy milk and blend.
After: ahhh…much better.
