It’s recipe week here on The More I Run and I’m excited to have another healthy and quick treat to share with you!

Hummus is such a versatile staple that I keep in my fridge most of the time.  It’s great to use in lieu of mayo on sandwiches, but also just as a simple side for dipping chips and veggies or especially pita bread!

The basic Hummus recipe is super easy…and once you have that made you can then add other optional ingredients to make all sorts of flavored hummus!

Here’s all you need for basic hummus:

1 can Chickpeas (aka Garbanzo Beans) drain and rinse
1-2 T Tahini (you can purchase from a health food store or order online)
1 T garlic
2 T Lemon Juice
1/2 t salt
drizzling of Olive Oil

Blend together in your food processor, drizzling the olive oil until you have the consistency you’re looking for…this is really a personal preference.  (For this recipe I went more for a mashed potato texture because of the ingredients I’ll be adding next).  But don’t think you have to follow this recipe exactly-increase or decrease your lemon juice/garlic, etc for your taste; you can also make it as thin or as thick as you’d like.

Now, for the Stars of the Show!

1 cup fresh Spinach
1/2 cup of artichoke (I also used the juice/oil from the jar because it adds creaminess)

Return your hummus, along with the spinach and artichoke back to the blender or food processor for a few seconds and voila’!

The magic happens!
