This recipe is to die for. Well, maybe not die. But it is pretty tasty and once you try it, I think you’ll agree.
But maybe you won’t die.
You can use this recipe for a basic waffle mix, bread or even muffins. This is soooooo much better than buying the frozen waffles from the grocer’s freezer section or worse, the muffin mix from the bag. Eewww.
Banana Nut Bread Waffles.

Banana Nut Bread Mini Muffins
- 1 cup almond flour
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 banana
- dash of salt
- 1 packet of stevia
- 1 egg
- 1/2 c almond milk
- 1/2 tsp vanilla or maple flavoring
- a palmful of walnuts
- Mix the dry ingredients first, followed by the banana, egg and milk and flavoring.
- Fold in the nuts and pour onto a hot, Pam-coated waffle iron or muffin tin.
- Cooking time will vary.
