Let me begin by saying I am by no means a foodie.  I’m not creative with recipes and most of the time what I cook doesn’t have a recipe. I just mix a little of this and a little of that….like my Mom and Grandma did.  You give me some venison and flour with some Crisco and I’ll fry you up some deer steak and homemade biscuits that will leave you begging for more, but don’t ask me for a recipe.  Get the idea?  Hey, it’s about living a healthy, balanced life, right?

I also LOVE salsa.  I eat it on eggs, corn chips, plain chips, whatever chips….I literally buy it by the large half-gallon jugs.  But I keep reading where it’s loaded with too much sodium and in some cases MSG and other bad-for-you ingredients, along with homemade tastes so much better, so I’ve been itching to try a homemade recipe.

I had to google a recipe (because I would have no idea on how to even begin to create my own recipe) and found this recipe over on The Chunky Chef‘s blog.  It’s not only delicious, but it’s also easy.  Two things I also love.

The ingredients are simple.

  • 1 large can of whole, peeled tomatoes
  • 1 small onion or 1/2 of a large onion (this is what I did
  • 1 jalapeño pepper (if you don’t like the heat, use a bell pepper instead)
  • the juice of 1-2 limes
  • 1 clove of garlic
  • 1 tsp of cumin
  • 1-2 tsp of salt
  • 1 tsp of sugar
  • cilantro

Give the onion, jalapeño and garlic a rough chop and add to your food processor.  Add the other ingredients with a good handful or two of fresh cilantro and pulse until the desired consistency.

In my case, I don’t own a food processor, so I used my protein shake blender.

I feel certain real foodies have real food processors, but I’m impressed with my own ingenuity.

Mix everything together and this is what you get!

Isn’t it pretty!?  And everything I’ve heard is dead on:  the taste is unbelievably fresh….so much different from the store bought kind.  Did I mention fresh?

I’m so glad I tried this!  I feel like I’ll never go back to buying it!  It’s that good!

Serves: 1 quart
Ingredients
  • 1 large can of whole, peeled tomatoes

  • 1 jalapeno pepper (add to taste, substitute a bell pepper if you don’t like the heat)
  • the juice of 1-2 limes
  • 1 clove of garlic
  • 1 tsp of cumin
  • 1-2 tsp of salt (to taste)
  • 1 tsp of sugar
  • fresh cilantro
Instructions
  1. Rough chop the onion, jalapeño and garlic and add to a food processor with the other ingredients. Pulse until the desired consistency.
